Asakura / Shinozaki (FUKUOKA)
https://shop.shinozaki-shochu.co.jp/
“Asakura” is a liqueur that allows you to enjoy the aroma and sweet fragrance just as they are when taken straight from the barrel. Shinozaki specializes in aged barley shochu matured in barrels. Barley shochu aged over a long period turns amber in color and emits a rich, sweet aroma. Under current regulations, shochu is subject to limits on absorbance, and must be filtered to reduce its absorbance to a specified level. During the filtration process, not only the color but also the wonderful aroma and flavor are lost. In order to let people experience the impression of the taste and aroma as they are from the barrel, they released a liqueur that is free from absorbance restrictions, allowing to avoid excessive filtration and express the superb aroma and flavor.

Tenkunotsuki umeshu / Oimatsu shuzo (Oita)
Located near the border of Oita and Fukuoka Prefectures, in the city of Hita—surrounded by the beautiful Kyushu mountains—this area is known as “Suikyo Hita”. Once a directly governed territory of the Edo Shogunate, Hita prospered and became known as the “Little Kyoto in Kyushu,” a place where unique and rich culture and industry flourished. The sake brewery located in Hita City, Oita Prefecture was founded in 1789 and is a long-established sake brewery with a long history. They originally began as a sake-only brewery. Around 1970, they also started producing shochu, and now they are also focusing on the production of a wide variety of liqueurs, led by plum wine, made using specialty fruits grown in Oita Prefecture and the local area.

Tsukushi umeshu / Nishiyoshida shuzo (FUKUOKA)
This is a liqueur made from locally grown fruits, utilizing the natural blessings of Chikugo-Yame. It uses plum fruits that are carefully cultivated with reduced pesticides in the mountains of Tachibana Town, Fukuoka Prefecture, about 20 minutes by car from the brewery. The flavor of the plum is fully drawn out. It offers a perfect balance of refreshing acidity and gentle sweetness.
